Tonights Dinner, any ideas?

Tonights dinner i would like to have something with potatoes, but something with eggs will do well too
Tonights.com Recommends:
-Cut the potatoes in small cubes and pan fry in a heavy metal skillet that can transfer to under the grill later.
-Saute with onions and garlic.
- Once the potatoes are turning golden. Add about 4 whisked eggs and let it cook gently on top of the potato pieces.
It will look like a large pancake.
-You can add whatever topping you want, eg red peppers, goats cheese, broccoli etc
- Once you think the underside is cooked, transfer to under the grill to cook on top.
Then enjoy

I would make breakfast. Take the potatoes and cut them up into small cubes. Toss the cubed potatoes in a pan with 2-4 tablespoons butter and salt and pepper. Pan fry on med -high until outside is golden brown. I either make fried eggs and english muffins to go with the potatoes. Or I make scrambled eggs and put the eggs, potatoes, and some cheese in a burrito. I hope you enjoy your dinner, whatever you end up eating!

Ida's answer just made me hungry...that sounded delish...my mom makes 'camp potatoes'...all you do is wash the taters, cut them in half long ways, put some butter in the bottom of a baking dish, add garlic, parsley and maybe some onion salt and pepper, bake @ 375 until you can stick a fork in the middle and it comes out easily (usually about 45 minutes)..they are sooo good....use Ida's soup beans idea and the corn bread!! mmmm, I know what I'm havin for dinner too!!!

how bout some mashed potatoes. for some variations try cooking them with crushed garlic (or add garlic powder when whipping)then whip them with some sour cream (lots)
or add a big scoop of cheez whiz
or just lots of butter and some montreal steak spice
or sprinkle some bacon bits ontop
baked potatoe..add some sour cream and shredded cheese after baked
devilled eggs as a side dish
or how bout a quiche
homemade french fries yum yum
potato salad has egg in it
whip potatoes, add mushrooms, onions, green pepper and cheez whiz, grated cheese ontop and bake in oven for a while

This is what I am making:
Bacon Cheeseburger Meatloaf
Recipe courtesy Paula Deen
1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8 ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1(3 ounce) can French fried onions
Preheat oven to 350 degrees F.
In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.
In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink

Brekfast Burritos
Saute 1/3C onions with some butter .
Microwave 1 large potatoe until done.Dice and add to onions.
Saute them until golden brown.
Add 5 eggs with a little milk and scramble
Add salt, pepper, fresh cilantro and chives
When egg mixture is done layer the following on a tortilla...
Cheese
Crispy bacon or sausage
Egg mixture
Sourcream Salsa
